Black beans and sweet potato stew with peanut butter.

This delicious recipe is inspired by a traditional African dish. I used black beans and sweet potatoes instead of chicken. What can't miss this dish is peanut butter.

Ingredients for 5 people:
250 gr brown basmati rice
500 gr diced sweet potatoes
500 gr cooked and drained black beans
150 gr peanut butter
120 gr fresh baby spinach
1 tomato passata (700ml)
70 gr grated ginger
1 onion diced
3 cloves of garlic
1 tsp of salt
Olive oil
Peanuts
Fresh parsley
Method:
Cook the rice first. For 1 part of rice 2 parts of water. Add some salt and when the water drains, cover and let it sit.
Heat a pot and add 3-4 tbs of olive oil. When the oil is hot add the onions, garlic and grated ginger.Stir fry for few minutes and add some water if necessary.
Add the sweet potatoes, salt, some water and let it cook covered for 10 minutes.
When the potatoes are ready, mash it with a potato masher.
Add black beans, tomato passata, water and cook for 10 minutes more.
When the sauce is ready add the peanut butter, spinaches, cover and let it simmer for 10-15 minutes.
Serve hot with basmati rice, peanuts and fresh parsley.
