Recipe for 15 no-meatballs


Ingredients:


  • 400 gr of cooked black beans

  • 400 gr of cooked quinoa

  • 75 gr of buckwheat flour

  • 1 bunch of parsley

  • 30 gr of pine-nuts

  • 1 clove of garlic

  • 1/2 onion

  • 1 teaspoon of paprika

  • Salt

  • Pepper

  • Olive oil

  • Bread crumbles


Tomato sauce:

  • 700 ml tomato passata

  • 5 cremini mushrooms

  • 1 eggplant

  • 2 cloves of garlic

  • Fresh basil

  • Salt

  • Pepper

Avocado and arugula salsa:


  • 2 ripe avoados

  • 1 lemon juiced

  • 2 tomatoes

  • 1 handful of arugula

  • Salt

  • Pepper
