The best tofu schnitzel

Why use meat when you can use a great plant based protein source like tofu for this ultimate tofu schnitzel recipe.
I wanted to use a traditional way of cooking so I pan fry them but you can skip this step and cook them only in the oven for about 20 minutes 180 ° , flipping them half way.
Ingredients for 6 tofu schnitzel:
1 block of firm tofu (375 gr)
100 gr of chickpeas flour
Water
Oat flour (or any other flour, for gluten free use rice flour or buckwheat)
Bread crumbs
Fennel seeds
Olive oil or coconut oil for frying
For the topping sauce:
150 gr of button mushrooms
100 gr of olives
Rosemery
1 small chopped white onion
