The most delicious and simplest avo toast!!!

Easy, fast, healthy and delicious!!

Delicious dish perfect for a healthy breakfast, a quick lunch or a light dinner. Avocados are a good source of vitamin C, E, K and B-6 and they also provide omega-3 fatty acids alongside many other nutrients.

Tomatoes are known for the antioxidant lycopene and mushrooms are rich of mineral and vitamins such as copper, zinc, potassium and some of the B vitamins. Whole grain bread is a healthy option compared with white bread, as richer in protein, minerals and fibres.

Ask at your local bakery for a sourdough whole grain bread, much greater for your GI tract than bread containing chemical yeast.

For an extra protein punch have some tofu scramble on the side.


  • 2 slices of whole grain bread

  • 1 avocado

  • 5-7 cherry tomatoes or baby roma

  • 8 button mushrooms

  • Fresh parsley

  • Olive oil

  • Himalayan salt

  • Black sesame seeds (optional)


  1. Warm a non-sticky pan and add a drizzle of olive oil.

  2. When the oil it's hot add the mushrooms, a pinch of salt and a little bit of water.

  3. Half way thru when the mushrooms are almost ready, add the tomatoes.

  4. Cook for just about 5 minutes, in the meantime toast the 2 slices of bread.

  5. Open a ripe avocado and spread the flesh on the bread.

  6. Top with the sautéed mushrooms and tomatoes, fresh chopped parsley and some black sesame seeds.
