Delicious falafel plate with coconut tzatziki sauce and roasted veggies.
Try this recipe and you will not be disappointed!!

When people tell me that being vegan is annoying, tasteless and is just about "eating salad", this is the kind of meal I want them to try!
Is made with 100% natural, healthy and low cost ingredients, it is gluten free and it taste amazing.
Being healthy and vegan is not annoying, is full of flavours and the options are unlimited.

Ingredients:
Roasted veggies:
1/2 butternut squash
2 zucchini
1 purple onion
4-5 garlic cloves
2 sweet potatoes
Paprika
Salt
Olive oil (optional)
Tzatziki sauce:
300 gr of coconut yogurt
1 handful of mint
1 cucumber
2 cloves of garlic
1 tbsp of paprika
1 tbsp of olive oil
A pinch of salt
The juice of 1 lemon
Happy funky vegan falafel:
1 cup of quinoa (uncooked)
250 gr of chickpeas (cooked and drained)
Potatoes ( 300 gr before cooking)
1 purple onion
1 handful of fresh basil
1 tsp of coconut oil
1/2 cup of pumpkin seeds
Fennel seeds
Turmeric
Paprika
Cumin
Salt
